Half of this lofty, elegant room in the Hotel Vancouver is the city's most fashionable (to be fair, its only) wine bar. The other half is an elegant dining room serving innovative contemporary cuisine. Though the tables are set with formal white linen and china, the rustic nautical decor---including a retired fishing boat out front---gives a pretty clear indication of the specialty here. This tiny 12-table bistro in the Kitsilano district created a stir as soon as it opened in early 1999. The simple decor of brown wicker chairs and white tablecloths belies the elegance of the food.
